Tsuki-no-Shio

A Treasure from the Sea of Kitaura, Infused with the Power of the Moon

The Moon, an essential presence for all forms of life. “Tsuki-no-Shio” (Moon Salt) is nurtured by the ebb and flow of the tides, governed by the moon’s gravity, and crafted with the heart and soul of our salt artisans. Kitaura, located in northern Miyazaki Prefecture, is a vibrant fishing town famous for its delicious seafood. This salt is a true treasure of Kitaura, filled with the blessings of its beautiful sea and the mystical power of the moon.

The secret to great salt is, above all, the purity of the seawater. Shimo-Aso Beach is Kyushu’s #1 as being the only beach in Kyushu selected in selected in “Japan’s 100 Best Swimming Beaches in the Sea Category Special Selection” by Ministry of the Environment.

Salt is an essential element for the human body. Our salt is a gift from nature, drawn from the pristine waters of Kitaura and slowly crafted over time using traditional methods. Rich in essential minerals like potassium and magnesium, it offers a mellow, well-rounded flavor that sets it apart from ordinary salt.

During the creation of “Tsuki-no-Shio” (Moon Salt), a unique process gives birth to large, glittering crystals that are truly the “diamonds”. This rare salt can only be produced in very small quantities.

Combining a natural sweetness with a rich depth of flavor, it is perfect for a wide range of dishes—from grilled fish and salt-steamed recipes to clear broth soups, pickled plums and preserves. The simpler the dish, the more you can appreciate the true essence of the ingredients, brought out by the salt. It also pairs exquisitely with olive oil; just these two ingredients alone are enough to elevate the flavors of fresh sashimi and vegetables.

Tsuki-no-Shio: Full Moon

Crafted from seawater with full of minerals drawn during the full moon. Our slow, meticulous process creates a smooth texture and a profound depth of flavor. This is a true masterpiece and a source of pride even for our master salt artisans.

Using our signature ” Tsuki-no-Shio” (Moon Salt), these meringues are meticulously handcrafted and baked one by one by the pastry chef. Because they are made with only the simplest ingredients, the true quality of each element shines through in every bite.

In the past, the town of Kitaura flourished with the traditional “Agehama” style of salt-making. Even today, we continue this legacy by drawing exceptionally clear seawater and crafting our salt slowly using time-honored methods. “Kitaura Tshuki-no-Shio” (Moon Salt) is only made possible when the blessings of the sea, the mystical power of the moon and the refined skills of our artisans all come together in perfect harmony.
